Vegetarian Summer Chili

Our easy-to-make Vegetarian Summer Chili is packed with fibre, plant-based protein, and vibrant summer veggies to make five deliciously satisfying servings for a family dinner or weekly meal prep—enjoy!

Ingredients

12.5 oz. can diced tomatoes
12.5 oz. can black bean, drained & rinsed
1½ cup vegetable broth
2 cup yellow onion, diced
1½ cup canned corn, drained & rinsed
3 tbsp. garlic, minced
1 cup zucchini, chopped

1 cup bell pepper, chopped
2 tbsp. cilantro, chopped
2 tbsp. chili powder
1 tbsp. cumin powder
1 tbsp. paprika
Pinch of salt
Pinch of pepper

Instructions

1. In a large pot, combine all ingredients and bring to a boil.

2. Once boiling, reduce heat, and let simmer for 34 to 45 minutes.

3. After that time, remove the pot from the heat and let it cool for a few minutes.

4. Once cooled, serve the chili and enjoy!

Tip

This meal is also super easy to meal prep! After the pot has cooled, divide the chili into 5 different air-tight containers and store them in the fridge. When ready to enjoy a serving, simply heat it up in the microwave before digging in.
