1. Cook meatballs based on package instructions.
2. In a skillet, combine brown sugar, vinegar, ketchup, soy sauce, and 2 cups of pineapple juice, and bring to a boil.
3. In another bowl, combine the remaining ¼ cup of pineapple juice with the arrowroot starch, and then pour it into the skillet, mixing everything together.
4. Once it's boiling, add in the meatballs, reduce heat, cover, and let simmer for 8 to 10 minutes, as the sauce thickens and the meatballs soak up the flavour.
5. Once the sauce is thicker, remove the skillet from the heat and stir in the pineapple chunks.
6. Divide the saucy meatballs into 5 air-tight containers with ½ a cup of rice, and store them in the fridge.
7. When ready to enjoy, remove a serving from the fridge, heat it up in the microwave for a few minutes, and then enjoy!
