Spring Salad With Veggies & Goat Cheese

Ingredients

5 cup asparagus, trimmed & shaved
2½ cup zucchini, shaved
2½ cup mixed greens
1¼ cup green peas
1¼ cup radish, sliced
5 oz. goat cheese, crumbled

5 tsp. olive oil
2 tbsp. lemon juice
1 tbsp. garlic, grated
1 tsp. honey
Pinch of salt
Pinch of pepper

Instructions

1. To prep the salad, shave the asparagus and zucchini with a vegetable peeler, slice the radish, and measure the green peas and greens.

2. Then, in a large bowl, whisk together olive oil, lemon juice, grated garlic, honey, salt, and pepper.

3. Once the dressing is combined, add all the vegetables to the large bowl, and toss everything together.

4. Once the salad is dressed, crumble the goat cheese over the salad and serve!

Tip

To add texture and crunch to the salad, chop 40 hazelnuts and sprinkle them on top before serving! This would add 1 Fat allotment per serving.
