Shrimp & Feta Summer Fresh Salad Recipe

Serves 2.

One serving = 1 Vegetable, 1 Protein, 1 Dairy, 1 Fruit, 1 Extra 


4 cups mixed greens
8 oz (227 g) shrimp
2 oz (60 g) feta cheese
½ cup blueberries
1 cup watermelon
4 Tbsp fat-free raspberry vinaigrette dressing (or other fat-free choice)
½ tsp Cajun seasoning


Sauté the shrimp for 1 minute per side on medium heat with Cajun seasoning.

While shrimp cools, assemble all other salad ingredients and toss with dressing. Mix in cooled shrimp and serve. Option: service dressing on the side.
