Pumpkin Soup

Our Pumpkin Soup is a cozy, nutrient-rich blend of pumpkin, onion, and garlic with a gentle cayenne kick—perfect for boosting immunity, warming you up on cool days, and proving that comfort food can still be light and nourishing—enjoy!

Ingredients

3 cup vegetable stock
2½ cup pumpkin, chopped
1 cup water
1 cup onion, sliced
½ cup half-and-half cream

2 tbsp. garlic, peeled
2 tsp. cayenne pepper
Pinch of pepper
Pinch of salt

Instructions

1. In a large pot, bring pumpkin, onion, garlic, broth, and water to a boil, uncovered.

2. Once boiling, reduce the heat to a simmer for 15 to 20 minutes, until the pumpkin can be pierced with a fork.

3. Once the pumpkin is soft, remove the pot from the heat and puree the soup using a blender.

4. Once the soup is pureed and smooth, return it to the pot, and stir in the cream, cayenne, salt, and pepper; season to your preference.

5. Once the soup is creamy and seasoned, pour it into some bowls, serve, and enjoy!

Tip

This soup also makes a great meal prep! Simply divide the soup into 5 different air-tight containers and store in the fridge until ready to enjoy a serving.
