Pumpkin Cinnamon Chocolate Chip Oatmeal Bars

Our Pumpkin Cinnamon Chocolate Chip Oatmeal Bars are a wholesome yet indulgent treat, blending fiber-rich oats, antioxidant-packed pumpkin, and a touch of natural sweetness for a nourishing snack that delivers both comfort and nutrition in every bite—enjoy!

Ingredients

3 cup old-fashioned whole rolled oats
1 cup pumpkin puree, canned
1 cup chocolate chips
⅓ cup unsweetened applesauce
⅓ cup coconut oil, melted
¼ cup maple syrup

¼ cup brown sugar
2 tsp. ground cinnamon
1 tsp. vanilla extract
1 tsp. baking powder
½ tsp. salt

Instructions

1. Preheat oven to 350° and line the bottom and sides of an 8-inch or 9-inch square baking pan with parchment paper.

2. Mill the oats slightly so they're finer in a food processor or blender.

3. Once the oats are broken down slightly, pour them into a large bowl, along with the pumpkin puree, chocolate chips, unsweetened applesauce, coconut oil, maple syrup, brown sugar, ground cinnamon, vanilla extract, baking powder, and salt, stirring everything together.

4. Once the mixture is fully combined and thick, spoon it into the prepared pan, flatten it down so it's flat and compact.

5. Then, place the pan in the hot oven to bake for 25 to 30 minutes.

6. Once the bars are cooked, remove them from the oven and let them cool in the pan for 30 to 60 minutes, until they're room temperature.

7. Then, place the pan in the refrigerator for 1 to 2 hours to chill and set.

8. After that time, remove the pan from the fridge, remove the mixture from the pan by lifting the parchment paper edges, and cut the mixture into square bars.

9. Once the bars are cut, place them in an air-tight container and store them in the fridge to enjoy whenever!
