Orange Rice Pudding

Orange Rice Pudding Recipe

Serves 4 | One serving = 1 Free Exchange OR ¼ Protein, 1 Starch, ¼ Fruit, 1 Fat


2 large eggs (whole)
2 packages stevia natural sweetener
4 tsp non-hydrogenated margarine
1 tsp orange zest
1 medium orange, peeled and diced
1 cup rice, cooked
½ tsp vanilla extract
½ tsp cinnamon (optional)


Beat eggs and sweetener in a large bowl. Heat margarine in a saucepan. Add orange zest and remove from heat. Combine diced orange, rice, margarine mixture and vanilla extract. Carefully fold in egg mixture.

Mix quickly and pour into a non-stick loaf pan.

Bake for 30 to 40 minutes at 375°F.

Can be served warm or chilled. Sprinkle with cinnamon (optional).
