Orange Rice Pudding

Orange Rice Pudding is a unique, fresh-tasting dessert idea. Serve this wonderful and creamy orange rice pudding recipe for dessert or a snack, or even for breakfast — let's try it out!


2 large eggs (whole)
2 packages stevia natural sweetener
4 tsp non-hydrogenated margarine
1 tsp orange zest

1 medium orange, peeled and diced
1 cup rice, cooked
½ tsp vanilla extract
½ tsp cinnamon (optional)


1. Beat eggs and sweetener in a large bowl.

2. Heat margarine in a saucepan.

3. Add orange zest and remove from heat.

4. Combine diced orange, rice, margarine mixture, and vanilla extract.

5. Carefully fold in the egg mixture.

6. Mix quickly and pour into a non-stick loaf pan.

7. Bake for 30 to 40 minutes at 375°F.

8. Can be served warm or chilled. Sprinkle with cinnamon (optional).
