1. Heat olive oil in a large pot over high heat.
2. Once hot, add garlic and onion to the pot and let cook for 1 to 2 minutes, until fragrant.
3. Then add bell peppers and cook for 5 to 8 minutes, until the onion is translucent.
4. Then add in the beef, breaking it up with a spatula, and cook for another 5 to 8 minutes, until it's browned.
5. Once the beef is cooked, add in the crushed tomatoes, black beans, macaroni noodles, beef broth, paprika, cumin, oregano, cayenne, pepper, and salt, and stir together.
6. Once everything is combined, bring the pot to a simmer, then turn the heat down to medium, cover, and cook for 12 to 15 minutes.
7. After that time, turn the stove OFF but leave the pot on the stove, remove the lid, and stir in half the cheese.
8. Once everything is combined and melted, top the Chili Mac & Cheese with the remaining cheese, put the lid back on the pot, and let it rest for 2 to 4 minutes.
9. Once the top layer of cheese has fully melted, serve the Chili Mac & Cheese in 5 separate bowls, and enjoy!
