Nachos Grande Recipe

Serves 4

One serving = 1 Protein, 1 Starch, 1 Dairy, 1 Veg


12 oz. ground beef (lean)
½ cup green onion, diced
1 cup red pepper, cubed
4 tortillas (6" round)
1 cup tomato, cubed
1 cup lettuce, shredded
4 oz. cheddar cheese, shredded
Jalapeños (optional)

garlic powder to taste
onion powder to taste


Preheat oven to 400°F. Brown ground beef in a frying pan. Drain and return to pan. Add garlic powder, onion powder, green onion and red pepper. Cook for two minutes. Cut tortillas into 1-inch triangles. Bake for 10 minutes or until crispy. Remove and place chips on a platter. Add tomato, lettuce and ground beef/vegetable mixture. Top with cheddar cheese and broil until cheese melts.

For a variety in protein or preferred taste, try ground chicken, veggie ground round, extra lean ground pork, beef or sirloin.

Use whole wheat tortillas for more fibre to help you stay full longer.
