Lemon Cake

Ingredients

1 lemon, sliced
1½ cups all-purpose flour
1 cup white sugar
¾ cup milk
½ cup butter
2 large eggs

1 tbsp. lemon zest
1 tbsp. lemon juice
2 tsp. vanilla extract
2 tsp. baking powder
Handful mint, chopped

Instructions

1. Preheat the oven to 350°F and grease a baking sheet.

2. In a large bowl, combine sugar, eggs, vanilla extract, and butter with an electric mixer until well blended.

3. In a separate bowl, mix together flour and baking powder.

4. Then, slowly add the dry mixture to the large bowl, and combine.

5. Finally, mix in the milk, lemon zest, and lemon juice.

6. Once the batter is fully combined, pour it into the prepared pan.

7. Bake in the preheated oven for 35 to 45 minutes, until a toothpick inserted into the center comes out clean.

8. Once baked, remove the cake from the oven and let it cool for 5 to 10 minutes before serving.

9. Garnish the cake with lemon slices and chopped mint—enjoy!
