1. Take the steak out of the fridge 60 to 90 minutes before grilling so it can get to room temperature.
2. While it gets to room temperature, pat the steak dry with some paper towel and sprinkle it with salt on all sides.
3. As cook time approaches, preheat the grill by making one half of the grill really hot (high-heat) and the other half not (no heat).
4. Once the steak is room temperature and the grill reaches 275 °F to 300 °F, place the steak on the non-heat side of the grill and close the lid to let the steak cook for 25 to 30 minutes.
5. After that time, flip the steak, close the lid, and cook for another 20 to 30 minutes, for a total cook time of 45 to 60 minutes.
6. After that time, move the steak to the high-heat side of the grill to sear, with the lid open, for 3 to 4 minutes per side.
7. Once the steak is seared, transfer it to a cutting board, smear it with the butter, garlic, and pepper, and then let it rest for 8 to 12 minutes.
8. Once rested, slice the steak up, serve it, and dig in!
