Grilled Stuffed Pork Tenderloin Recipe

Serves 4.

One serving = 1 Protein, 1 Vegetable, 1 Dairy


1 lb (454 g) pork tenderloin
1 red pepper
1 stalk celery
1 cup mushrooms
1 cup cucumber
2 cloves garlic
½ cup onion
½ tsp Non-sodium seasoning of your choice
½ tsp parsley
½ tsp oregano
4 oz. marble cheese (21% or less milk fat)


Chop pepper, celery, mushrooms, cucumber, garlic, and onions. Toss into a blender. Add spices and cheese.

Slice pork tenderloin down the centre but not all the way through. One quarter of mixture should fit in the tenderloin. Fasten with toothpicks or cooking twine. Top with remaining mixture and wrap in foil. Grill until no longer pink and a temperature of at least 160°F is reached.

Divide into 4 servings, sliced into wheels.
