Our sweet and satisfying Grilled Pineapple & Ice Cream recipe contains vitamins, healthy fats, and a touch of natural sweetness for a balanced, feel-good tasting treat—enjoy!
Ingredients
2 cup pineapple, peeled, cored, & sliced
20 peanuts, chopped
2 cup ice cream
4 tsp. honey
2 tsp. butter, melted
Pinch of salt
Instructions
1. In a large Ziploc bag, marinate pineapple slices with honey, butter, and salt for 1 to 24 hours in the fridge.
2. When ready to cook, preheat the grill to high heat.
3. Once hot, place pineapple slices on the grill, cooking for 2 to 4 minutes a side.
4. Once grilled, remove the pineapple slices from the barbecue and let rest for 5 minutes.
5. Once rested, serve the pineapple slices on a plate, topped with peanuts, and a half cup of ice cream per serving.
