Gazpacho (Spanish Cold Soup)

Refresh your palate and boost your health with our Gazpacho Recipe, which is a classic Spanish cold soup brimming with nutrients from fresh vegetables — enjoy!


4 cup ripe tomatoes, chopped
2 cup english cucumber, peeled & chopped
1 cup red pepper, diced
½ cup spanish onion, chopped
2 tbsp. garlic, chopped
6 tsp. olive oil

1 tsp. jalapeno pepper, chopped
¼ tsp. freshly squeezed lemon juice
dash of tobasco
few ice cubes
pinch of fresh cilantro or chives, chopped


1. Place all the vegetables and ice cubes in a blender and mix together until smooth.

2. Keep the blender mixing on a lower speed, and then drizzle the olive oil into it.

3. Once it's all mixed together, pour the cold soup into bowls, garnish with cilantro or chives, then serve and enjoy!


If you like your soup smoother, add some water to the vegetables while blending in the first step and then pour it through a strainer before serving.
