1 Serving (2 egg bites) = 1 dairy, ½ protein
1 cup Monterey Jack or cheddar cheese, shredded
¾ cup plain Greek yogurt, fat free
¾ cup cottage cheese, fat free
¾ cup assorted* vegetables, herbs or lean ham/turkey
*For your flavourings assortment, try any combination of broccoli florets, chives, bell peppers, sun-dried tomatoes, spinach, basil, or a maximum of 1 slice of lean ham or turkey.
Preheat oven to 375°F.
Add all ingredients except your assorted vegetables, herbs and/or lean sliced meat into a medium bowl. Combine with a blender for 30 seconds.
Spray a cupcake pan or silicone egg mold with non-fat cooking spray (enough to make 6 egg bites). Fill with blended mixture first, then add your assorted flavourings.
Bake for 20 minutes. Egg bites should be lightly browned. The egg bites will rise during cooking but will settle once cooled.
Freeze your egg bites or refrigerate for up to a week.
To serve, microwave for 30-45 seconds. Enjoy!
