Crispy Chicken Nuggets Recipe

Serves 4.

One serving = 1 Protein, 1 Starch, 1 Fat


2 cups homemade bread crumbs 
1 tsp. paprika
1 tsp. black pepper
20 oz. boneless, skinless chicken breast
4 tsp. olive oil 

How You Prepare It

Combine bread crumbs, paprika and pepper in a large plastic bag.

Cut chicken into bite size pieces. Add 3 to 4 pieces to the bag (do not crowd bag). Seal bag and shake to coat chicken.

Place coated chicken pieces on a large plate. Repeat using remaining chicken pieces.

Heat olive oil in a large skillet. Add chicken pieces. Cook 10 to 12 minutes until golden brown and cooked through, turning as needed.
