Cottage Cheese Penne Alla Vodka

8 oz. uncooked whole-grain penne pasta
2 tbsp. olive oil
1 cup onion minced
3 tsp. garlic minced
½ tsp. red pepper flakes
156 ml. tomato paste

½ cup pasta water
1 cup full-fat cottage cheese
salt to taste
2 oz. parmesan cheese
¼ cup basil, for garnish


1. Bring a large pot of salted water to a boil.

2. While the water comes to a boil, heat a large skillet over medium heat.

3. Once the skillet is hot, add olive oil, onions, garlic, and red pepper flakes, then cook for about 4 minutes.

4. While the skillet ingredients cook, boil the penne pasta according to the instructions, for approximately 9 minutes.

5. After that, add the tomato paste and pasta water to the skillet, stirring and cooking for another 5 minutes

6. Once the skillet mixture is combined, remove it from the heat and add the contents to a food processor or blender.

7. Once the mixture is in the blender, add the cottage cheese and combine together until it's smooth.

8. Once smooth, add the sauce back to the skillet with the cooked penne, stirring to coat all the noodles.

9. Once the pasta is sauced up, divide it into bowls and top it with the parmesan and basil, then serve!
