  • 3 cups kale
  • ½ cup onion, fi nely-chopped
  • 3 cloves garlic, minced
  • ½ cup water
  • 1 bay leaf
  • black pepper to taste
  • 4 lemon wedges
  • non-fat, non-hydrogenated cooking spray


Wash kale thoroughly in cold water. Do not dry. Strip leaves from the tough center ribs. Discard the ribs. Cut out any blemished areas. Spray a frying pan with non-fat, non-hydrogenated cooking spray. Sauté onion for 3 to 4 minutes. Add kale leaves, garlic, water, bay leaf and black pepper. Cover and steam for 10 minutes or until tender, stirring occasionally. Remove bay leaf before serving. Serve with lemon wedges.
