Citrus Kale Salad

Citrus Kale Salad is a fresh, crunchy salad that's high in fiber, low in calories, and full of flavor which is a perfect compliment to your next dinner — enjoy!


3 cups kale
½ cup onion, finely chopped
3 cloves garlic, minced
½ cup water

1 bay leaf
black pepper to taste
4 lemon wedges
non-fat, non-hydrogenated cooking spray


1. Wash kale thoroughly in cold water. Do not dry.

2. Strip leaves from the tough center ribs. Discard the ribs. Cut out any blemished areas.

3. Spray a frying pan with non-fat, non-hydrogenated cooking spray.

4. Sauté onion for 3 to 4 minutes.

5. Add kale leaves, garlic, water, bay leaf and black pepper.

6. Cover and steam for 10 minutes or until tender, stirring occasionally.

7. Remove bay leaf before serving.

8. Serve with lemon wedges.
