Citrus Kale Salad Recipe
Serves 1 | One serving = 1 Vegetable
- 3 cups kale
- ½ cup onion, finely-chopped
- 3 cloves garlic, minced
- ½ cup water
- 1 bay leaf
- black pepper to taste
- 4 lemon wedges
- non-fat, non-hydrogenated cooking spray
Wash kale thoroughly in cold water. Do not dry. Strip leaves from the tough center ribs. Discard the ribs. Cut out any blemished areas.
Spray a frying pan with non-fat, non-hydrogenated cooking spray. Sauté onion for 3 to 4 minutes. Add kale leaves, garlic, water, bay leaf and black pepper. Cover and steam for 10 minutes or until tender, stirring occasionally.
Remove bay leaf before serving. Serve with lemon wedges.
