Chickpea Coconut Curry with Basmati Rice

Our Chickpea Coconut Curry with Basmati Rice is a hearty, plant-powered dish packed with protein-rich chickpeas, fiber-filled basmati rice, and nutrient-dense spices, offering a wholesome, flavourful way to support your health and wellness goals—enjoy!

Ingredients

3¾ cup chickpeas
2½ cup rice, cooked
2½ cup coconut milk
2½ cup tomatoes, diced
1 cup white onion, diced
3 tbsp. garlic, minced or grated
1½ tbsp. garam masala powder

5 tsp. coconut oil
2½ tsp. coconut flour
2½ tsp. curry powder
1 tsp. cumin
1 tsp. cayenne pepper
Pinch of pepper
Pinch of salt

Instructions

1. Warm a deep pot over medium heat with the coconut oil.

2. Once hot, add the onions and tomatoes, and let them cook for 5 to 7 minutes.

3. After that time, add in the chickpeas, garlic, garam masala, curry powder, cumin, salt, and pepper, stirring everything together well and cooking for 1 to 3 minutes.

4. Then, stir in the coconut milk and the flour, and bring everything to a boil.

5. Once boiling, reduce the heat, and let everything simmer together for 10 to 15 minutes.

6. Finally, remove the curry from the heat and let it cool for 3 to 6 minutes.

7. Once slightly cooled, place a fifth of the curry over half a cup of rice in 5 separate bowls, and then dig in!

Tip

To meal prep this recipe, simply divide the curry into 5 different air-tight containers, with half a cup of cooked rice in each, once it has cooled. Then, store the containers in the fridge until you're ready to enjoy a serving. Warm up a serving in the microwave for a few minutes before digging into it!
