Chicken Marengo Recipe

Serves 4.

One serving equals 1 Protein, 1 ½ Vegetable



4 skinless, boneless chicken breasts (5 oz. each)
2 cups mushrooms, sliced
1 cup onion, chopped
2 cloves garlic, minced
1 tbsp. fresh parsley, chopped
½ tsp. thyme, dried
¼ tsp. rosemary, dried
2 cups plum tomatoes
¼ cup wine (dry white)
1 bay leaf



Lightly coat an unheated large skillet with non-stick cooking spray. Add chicken and brown lightly on all sides over medium-high heat. Remove chicken. Add mushrooms, onion and garlic to the skillet. Cook and stir over medium heat until onion is tender.

Return chicken to skillet. Sprinkle with parsley, thyme and rosemary. Add tomatoes, white wine and bay leaf. Bring to a boil and reduce heat. Partially cover and gently simmer for about 25 minutes until chicken is tender. Remove bay leaf before serving.
