Chicken Burrito Bowl

Our Chicken Burrito Bowl is a high-protein, fibre-rich recipe that's packed with bold flavour and fresh ingredients—perfect for easy, nutritious meal prep all week long—enjoy!

Ingredients

25 oz. chicken breasts, boneless & skinless
2½ cup white rice, cooked
2½ cup romaine lettuce, chopped
1½ cup canned black beans (drained & rinsed)
1¼ cup canned corn (drained & rinsed)
5 oz. cheddar cheese, shredded
10 tbsp. salsa

5 tsp. extra virgin olive oil
2½ tsp. ground paprika
2½ tsp. ground cumin
1½ tsp. ground chili pepper
Pinch of salt
Pinch of pepper

Instructions

1. Remove the chicken from the fridge 30 minutes before serving, and place it in a Ziplock bag with the olive oil, paprika, cumin, chili pepper, salt, and pepper.

2. Shake the chicken in the bag with the oil and spices until everything is evenly coated, and then set it aside to get to room temperature and marinate.

3. In the meantime, prepare all the toppings.

4. When the chicken is ready to cook, heat a nonstick pan over medium heat.

5. Once hot, add the seasoned chicken, and cook for 12 to 15 minutes, until thoroughly cooked.

6. Once cooked, set the chicken aside for a few minutes to cool.

7. Compile the bowls by adding half a cup of rice, half a cup of lettuce, a quarter cup of corn, a quarter cup of black beans, 1 ounce of cheese, 2 tablespoons of salsa, and 5 ounces of the chicken to each serving.

8. Once the bowls are made, serve, and enjoy!
