Our refreshing Bulgarian Tarator Soup is a light, probiotic-rich recipe packed with hydrating cucumber, heart-healthy olive oil, and digestion-supporting garlic—perfect for a cool, nutritious boost—enjoy!
Ingredients
2½ cup cucumber, peeled & diced
1½ cup plain greek yogurt
1 cup water
3 tbsp. garlic, minced
3 tbsp. dill, chopped
1½ tbsp. lemon juice, freshly squeezed
4 tsp. olive oil
Pinch of salt
Instructions
1. In a large bowl, combine cucumber, yogurt, garlic, lemon juice, dill, olive oil, and salt.
2. Once combined, slowly pour the water into the chilled soup as it's stirred.
3. Depending on preference, add more water to thin out the soup, or place it as is in the fridge for 30 minutes to chill.
4. Once chilled, serve the soup and enjoy!
Tip
This soup also makes a great meal prep! Just store it in the fridge in 5 different air-tight containers, and enjoy the servings throughout the week.
