Intensely savory flavors of the mushrooms, onions, and beef melded with the rich and slightly tangy sour cream — enjoy!
2 cup whole wheat spaghetti 16 oz beef, slightly thawed 2 tsp olive oil ½ cup onion 1 cup mushrooms ¼ tsp black pepper ½ tsp coriander
1 tsp chopped parsley ¼ tsp nutmeg ½ tsp minced garlic 2 tsp mayonnaise 6 oz water 8 Tbsp fat-free sour cream
1. Cook and drain whole wheat spaghetti. 2. Cut beef into long thin strips. 3. Heat olive oil in a large sauté pan. 4. Sauté onion, mushrooms, black pepper, coriander, parsley, nutmeg, and garlic. 5. Add beef and mayonnaise. Dilute with water. 6. Reduce heat and simmer for 30 – 40 minutes or until beef is tender. 7. Add sour cream. Stir well. Pour over spaghetti.
