1. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic, pepper, and salt until fully combined to make the dressing and set aside.
2. Heat a large skillet over medium-high heat.
3. Once the skillet is hot, add in 1 tablespoon of olive oil and the chopped kale, continuously stirring for 2 to 4 minutes.
4. Once kale is warmed, but not too wilted, transfer it to a large serving bowl, along with the quinoa, feta, and walnuts to make the salad.
5. Drizzle the dressing over the warm salad and toss together until well combined, and then serve!
