This healthy, balanced Fresh Summer Shrimp & Feta Salad Recipe is rich in vitamins, minerals, & fiber, with a nice salty & creamy finish thanks to the feta — it’s all yours!
4 cups mixed greens
8 oz (227 g) shrimp
2 oz (60 g) feta cheese
½ cup blueberries
1 cup watermelon
4 tbsp fat-free raspberry vinaigrette dressing (or other fat-free choice)
½ tsp Cajun seasoning
1. Sauté the shrimp for 1 minute per side on medium heat with Cajun seasoning.
2. While shrimp cools, assemble all other salad ingredients and toss with dressing.
3. Once the shrimp is cooked and cooled, add them to the salad and serve.
