Spicy Veggie Rice

This Vegetarian Spicy Veggie Rice is a must-try with simple ingredients — let's try it out at home!


2 cups water
1 cup rice (brown, long grain)
2 tsp olive oil
½ cup red onion, chopped
1 tsp garlic, minced

½ tsp paprika
¼ tsp chilli flakes
½ cup corn (niblets)
½ cup green peas
½ cup carrot, chopped


1. Bring water to a boil and reduce to medium heat.

2. Cook rice for 40 to 45 minutes or until tender. Drain and let cool.

3. Sauté onion, garlic, paprika, and chili flakes in a pan with olive oil for 5 to 7 minutes or until onion is golden brown.

4. Add corn, peas, carrots and rice.

5. Reduce heat and cook for 5 more minutes.
