Spicy Veggie Rice Recipe

Serves 4.

1 serving equals 1 Starch, 1 Vegetable and ½ Fat.


2 cups water

1 cup rice (brown, long grain)
2 tsp olive oil
½ cup red onion, chopped
1 tsp garlic, minced
½ tsp paprika
¼ tsp chilli flakes
½ cup corn (niblets)
½ cup green peas
½ cup carrot, chopped


Bring water to a boil and reduce to medium heat. Cook rice for 40 to 45 minutes or until tender. Drain and let cool.

Sauté onion, garlic, paprika and chilli flakes in a pan with olive oil for 5 to 7 minutes or until onion is golden brown. Add corn, peas, carrot and rice.

Reduce heat and cook for 5 more minutes.
