Simple, Healthy Latkes
Serves 4 | One serving of latke = 1 Starch, 1/2 Vegetable, 2 Extras
4 1/2 cups of shredded potatoes
1 cup of sliced onion
1 large egg
2 Tbsp of breadcrumbs
Ground pepper and salt to taste
Place cheesecloth, paper towel, or dish towel in a bowl. Place shredded potatoes on cloth of choice, then pull the corners of the cloth together and twist, so you strain out some of the liquid from the potatoes. Transfer dry potatoes to a bowl, and add onion, egg, and breadcrumbs to mix together.
Heat up frying pan on medium-high heat. Once hot, add avocado oil to pan, enough to coat the whole bottom. Scoop potato mixture out and make a mini patty in your hands. Try and keep the patty sizes similar. Place the potato patty in the pan and press it flat with a spatula. Fill the pan with flattened potato patties, but don't overcrowd. Cook each patty for 3 to 4 minutes per side. Once cooked, they have a golden-brown colour, transfer latkes to a paper towel lined plate to absorb some of the excess cooking oil. Repeat these steps until all potato mixture is used.
Once all latkes are cooked, serve them and enjoy them!
- Use a cast-iron skillet if you want extra crispy latkes
- Serve with apple sauce or sour cream to add moisture and flavour
