Protein-Packed Banana Pancakes

Our Protein-Packed Banana Pancakes blend naturally sweet bananas, protein-rich VHP Vanilla Shake mix, and energizing spices into a fluffy, nutrient-dense stack that not only fuels your body with lasting energy but also makes the perfect wholesome breakfast or convenient post-workout meal prep option—enjoy!

Ingredients

2 packages of VHP Vanilla Meal Replacement Shake mix
2½ medium bananas
4 large eggs
5 tbsp. maple syrup

2 tsp. cinnamon powder
1 tsp. baking powder
Splash of milk (based on consistency preference)
Pinch of salt

Instructions

1. Add all ingredients together in a bowl, except the syrup, and mix thoroughly, ensuring the bananas are fully mashed.

2. Once the pancake mixture is fully combined, cook the pancakes over low heat for 3 to 5 minutes per side or until browned; use a quarter cup to measure out the pancakes.

3. Once the pancakes are cooked, you can serve them right away (3 pancakes per serving) with a tablespoon of maple syrup, OR you can let them cool to meal prep.

4. If you're meal prepping, once the pancakes are cool, place a piece of parchment paper between each pancake and store them in a freezer-safe bag.

5. When ready to enjoy a serving, remove 3 packages from the bag, pop them in the microwave (one at a time) for a minute, and then top with a tablespoon of maple syrup!
