1. Heat a large pot over medium-high heat.
2. Once hot, add sausage and cook for 5 to 8 minutes, breaking it apart as it cooks.
3. Once the sausage is cooked, remove it from the pot and set it aside.
4. Return the empty pot to heat, and add in the butter and onions, cooking for 5 to 8 minutes.
5. Once cooked, add in the garlic, cooking for another 3 to 5 minutes.
6. After that time, add in the chicken broth, water, potatoes, salt, and pepper, bring to a boil, and then let boil for 10 to 15 minutes, until potatoes are soft.
7. Once the potatoes are soft, reduce heat to low, stir in kale, half-and-half, and sausage, and let simmer for 5 to 8 minutes.
8. After that time, remove the soup from heat, let cool for a few minutes, and then serve it up!
