
Pineapple Chicken Salad Recipe
Serves 2.
One serving = 1 Protein, 1 ¾ Vegetables, 1 Fruit, ½ Dairy
Dressing Ingredients
6 oz yogurt (fat-free, plain)¼ tsp ground ginger
½ tsp curry powder
Salad Ingredients
10 oz chicken, cooked and diced1 cup fresh or canned pineapple, chopped
½ cup celery, sliced
¼ cup green onion, sliced
2 cups lettuce, shredded
Instructions
Combine yogurt, ginger and curry powder for the dressing. In a separate bowl,
combine all other ingredients and top with dressing.
Eat immediately or refrigerate and enjoy later.
