Marinated Portobello Pasta Recipe

This beautiful, healthy Marinated Portobello Pasta Recipe will make you feel like you're eating out without actually having to go out – enjoy! 

Serves 4 | One serving = 1 Starch, ¼ Vegetable, & ½ Fat

Ingredients

1 cup portobello mushrooms, sliced
2 Tbsp balsamic vinegar
3 cloves garlic, chopped
2 cups fettucine or linguine, cooked
2 tsp olive oil
Fresh basil to taste

Instructions

Combine mushrooms, balsamic vinegar and garlic in a sealable container. Marinate for 4 hours.

Toss cooked linguine with olive oil.

Top with marinated mushrooms and garnish with basil. Buon appetito!

Tip!

Use whole wheat pasta for a fibre boost that will help you stay full longer.
