Marinated Portobello Pasta Recipe

Serves 4.

One serving = 1 Starch, ¼ Vegetable, and ½ Fat



1 cup portobello mushrooms, sliced
2 Tbsp balsamic vinegar
3 cloves garlic, chopped
2 cups fettucine or linguine, cooked
2 tsp olive oil
Fresh basil to taste



Combine mushrooms, balsamic vinegar and garlic in a sealable container. Marinate for 4 hours.

Toss cooked linguine with olive oil.

Top with marinated mushrooms and garnish with basil. Buon appetito!
