Leftover Turkey Mash
Looking to use what's left of your turkey after the holidays? Leftover Turkey Mash makes delicious turkey hash with mashed potatoes and squash.
Serves 4 | 1 serving = 1 Protein, ½ Fruit, 1½ Veg
Ingredients
1 4 oz. package ground turkey or 4 oz leftover turkey (white meat)
1 butternut squash, cubed (or substitute any squash)
2 cloves garlic, minced
1 medium white onion
2 medium apples
1tbsp olive oil
Italian seasoning and/or herbs to taste
Instructions
Boil water for squash. Once boiling, cook until soft (about 4-6 minutes).
While squash boils, prepare the turkey mixture.
- For packaged ground turkey: cook ground turkey in a large pan. Once cooked, removed turkey and drain fluid from the pan. Return pan to stove.
- For leftovers: gently heat turkey in a large pan.
Add olive oil, onion and garlic to pan and cook for 2-3 minutes until soft. Add apples and Italian seasoning (as much as you would like).
Once squash is cooked, strain and mash. Salt, additional seasonings, butter or oil are optional, but these may add additional Herbal Magic fat servings.
In a bowl, press mashed squashed into an even layer. Add the turkey mixture on top, and enjoy!
