Jalapeno Bean Burgers
One serving (1 patty) = ¾ Protein, ¼ Starch, ¼ Vegetable, 1 Extra
1 can (16 oz / 480 g) kidney beans, drained & rinsed
1 small onion, ﬁnely chopped
1 small tomato, chopped
1 jalapeno chili, seeded & chopped
1 garlic clove, ﬁnely minced
1⁄4 cup (50 ml) BBQ sauce
1⁄3 cup (75 ml / 36 g) bread crumbs
Non-fat cooking spray
In a bowl, mash beans with a fork. Add ﬁrst 5 ingredients.
Slowly add bread crumbs and form into 4 patties.
Grill in a skillet coated with non-fat cooking spray until heated through.
Serve with barbecue sauce and/or your favourite veggie toppings.
