Citrusy Holiday Salad

This Citrusy Holiday Salad recipe adds some vitamin C and healthy crunch to any Holiday Dinner, plus it can serve as a decorative piece for the table — enjoy!

Ingredients

6 cups mixed green salad
1 can (11 oz.) mandarin oranges, drained & dried
1 cup dried cranberries
½ cup beets, cooked & sliced
½ cup herbed goat cheese, crumbled
¼ cup pecans

¼ cup red wine vinegar
¼ cup olive oil
2 tbsp. maple syrup
1 tbsp. dijon mustard
Pinch of salt

Instructions

1. In a large salad bowl, mix together the red wine vinegar, olive oil, maple syrup, dijon mustard, salt, and half the goat cheese (½ cup).

2. Once the dressing is made, toss the mixed greens, mandarin oranges, cranberries, beets, the other half of the goat cheese, and pecans together in the bowl with the dressing.

3. Once the salad is dressed, serve it alongside your other Holiday Dinner dishes and enjoy!

Tip

Instead of serving your salad in a big bowl, arrange it as a wreath around a large serving plate, and just drizzle the dressing over it once you have it nicely plated.
