Ginger Carrot Soup

This Ginger Carrot Soup Recipe makes a vegan, creamy, smooth dinner or lunch, perfect for cold nights and chilly days — give it a try!

Ingredients

4 cup carrot, chopped
3 cup vegetable broth
1 cup yellow onion, chopped
2 tbsp. garlic, chopped
2 tbsp. fresh ginger, grated

2 tbsp. coconut milk
1 tbsp. apple cider vinegar
4 tsp. coconut oil
1 tsp. salt
1 tsp. black pepper

Instructions

1. Heat a large pot over medium-high heat.

2. Once hot, add coconut oil and onions, sautéing for approximately 5 to 7 minutes.

3. Once onions are soft, add garlic and carrots to the pot, cooking for 7 to 10 minutes.

4. Once the carrots are soft, add ginger, apple cider vinegar, broth, salt, and pepper to the pot, bringing to a boil.

5. Once boiling, reduce heat and let simmer for 30 minutes.

6. After that time, let it cool slightly and then blend the soup, either with an immersion blender or by ladling the contents into an actual blender in batches.

7. Once the soup is fully blended and smooth, return it to the pot and add the coconut milk, letting it simmer for another 5 to 10 minutes.

8. Once the flavours and texture are to your liking, serve, and enjoy!

Tip

If the soup is too thick, add some water with the coconut milk to make it runnier.
