Garlic Cauliflower Mashed

This Garlic Cauliflower Mashed recipe is a great alternative to the classic garlic mashed potatoes, as it has fewer carbs but the same delicious and creamy texture — enjoy!

Ingredients

6 cups cauliflower, chopped
1 cup cheddar cheese, grated
¼ cup sour cream
3 tbsp. garlic, grated

2 tbsp. butter
3 tbsp. chives, chopped
Pinch of salt
Pinch of pepper

Instructions

1. Bring a medium pot of salted water to a boil.

2 Once boiling, add the chopped cauliflower to the pot for approximately 12 minutes, or until soft, and then stain it.

3. Once the cauliflower is strained and cooled slightly, wring it out in a kitchen towel or paper towel to remove even more moister.

4. Return the "dried" soft cauliflower to the pot, and mash it together with the cheese, sour cream, garlic, margarine, salt, and pepper.

5. Once your cauliflower is mashed to your preferred texture, top it with the chives, stirring them into the mash slightly if you'd like, then serve!

Tip

If you'd like a really smooth cauliflower mash, you can always use a food processor or a hand beater to puree the cauliflower.
