Garlic Bruschetta Pita Recipe

Serves 2.

One serving = 1 Starch, ½ Vegetable, 2 Fat



1 regular pita, 6 ½ inches (whole wheat recommended)
4 tsp olive oil
1 garlic clove, minced
1 cup tomato, diced
¼ cup fresh basil, shredded
Black pepper to taste
Sodium-free Italian seasoning to taste (optional)



Preheat oven to 300°F. Cut pita into triangles. Brush with two teaspoons of olive oil and half the garlic. Bake 12-15 minutes until golden grown.

Mix tomato, remaining olive oil, garlic, basil, pepper and optional Italian seasoning. Spoon onto warm pita triangles.



Use a whole wheat pita with more fibre to help you stay full longer.
