Ingredients
4 large bell peppers (any color)
1 cup cottage cheese
1 cup cooked quinoa
1 cup tomatoes, diced
½ cup spinach, chopped
½ cup parmesan cheese, grated
Pinch of salt
Pinch of pepper
Instructions
1. Preheat the oven to 375°F.
2. Cut the tops off the bell peppers and remove the seeds and membranes.
3. In a large bowl, mix together cottage cheese, cooked quinoa, diced tomatoes, chopped spinach, parmesan cheese, salt, and pepper.
4. Stuff the cottage cheese mixture into the hollowed-out bell peppers.
5. Place the stuffed peppers in a baking dish and cover with foil.
6. Bake for 30 to 35 minutes or until the peppers are tender.
