Chickpeas, Cucumber, & Feta Salad

Our Chickpeas, Cucumber, & Feta Salad is packed with plant-based protein, fibre, and refreshing Mediterranean flavours for a satisfying meal that’s perfect for meal prepping—enjoy!

Ingredients

3¾ cup chickpeas, drained & dried
2½ cup cucumber, peeled & diced
1¼ cup red onion, diced
¼ cup dill, finely chopped
5 oz. feta cheese, crumbled

5 tsp. olive oil
5 tsp. lemon juice
2 tsp. red wine vinegar
Pinch of salt
Pinch of pepper

Instructions

1. In a large bowl, whisk together dill, olive oil, lemon juice, vinegar, salt, and pepper.

2. Once the dressing is combined, add the chickpeas, cucumber, red onion, and feta to the bowl, tossing everything together.

3. Once the salad is dressed, serve it, dig in, and enjoy!

4. You can also divide the salad into 5 different air-tight containers, storing them in the fridge until ready to enjoy.

Tip

You can add more protein to your salad by adding a 4-ounce cooked chicken breast to each serving! The added chicken would add 1 Protein allotment per serving.
