1. In a large mixing bowl combine cooked quinoa, cucumber, tomato, chickpea, lemon juice, olive oil, salt, and pepper.
2. Once mixed, add in feta and parsley, tossing together a few times to combine.
3. Once the salad is all mixed together, place it in the fridge for 10 to 20 minutes to chill.
4. Once chilled, serve the salad and enjoy!
