Bulgur Pilaf

This classic Bulgur Pilaf is a timeless dish bursting with aromatic spices & hearty bulgur that has a satisfying chewiness to it to delight & comfort — yatamatae!

Ingredients

2½ cup vegetable broth
2 cup tomatoes, finely chopped
1½ cup bulgur
1½ cup onion, finely chopped
1 cup red pepper, finely chopped
3 tbsp. tomato paste

1½ tbsp. olive oil
1½ tbsp. parsley finely chopped
1½ tsp. cumin
1½ tsp. salt
½ tsp. pepper

Instructions

1. Heat olive oil in a large pot over medium-high heat.

2. Once hot, add the onions to the pot and sauté for approximately 5 minutes.

3. Once onions are soft and fragrant, add in the tomato paste, tomatoes, and peppers combining and cooking for 3 to 5 minutes.

4. After that, add the bulgur, cumin, salt, and pepper, combining and cooking for another 3 to 5 minutes.

5. After that, add the broth slowly to the pot, stirring everything together.

6. Once all ingredients are well combined, place a lid on the pot, remove it from heat, and let it set for 10 to 12 minutes until all the liquid is absorbed.

7. After that time, remove the lid from the pot and fluff the bulgur, add it to a serving bowl, top it with the parsley, serve, and then enjoy!

Tip

Serve with 1 tablespoon of plain yogurt, per serving, to add some creaminess to the dish, which would add 1 Extra allotment.
