Broccoli Egg Bites

This easy breakfast meal prep is packed with protein and veggies to help kickstart your day. Featuring eggs, broccoli, onion, and cheese, this recipe makes nutritious and delicious egg bites that are perfect for those busy mornings when you need a quick and healthy meal — enjoy!

Ingredients

10 eggs
1 cup broccoli, chopped
1 cup onion, diced
¼ cup milk
1 tsp. oil

5 oz. cheese
Pinch of salt
Pinch of pepper
Pinch of garlic powder
Non-stick cooking spray

Instructions

1. Preheat oven to 375°F.

2. While the oven heats, cook the onion in the oil for 3 to 5 minutes, until translucent and fragrant.

3. Once cooked, remove the onions from heat and set aside.

4. Spray a muffin tin with non-stick cooking spray, and fill 10 muffin holes with the sautéed onions and uncooked broccoli chunks, equally.

5. In a large bowl, whisk all the eggs together with the milk, salt, pepper, and garlic powder.

6. Pour the seasoned egg mixture into the 10 muffin holes with the vegetables.

7. Sprinkle the cheese evenly over the 10 filled muffin holes.

8. Place the muffin tin in the oven and let cook for 15 to 20 minutes, until the eggs are set and the cheese has melted.

9. Once cooked, remove the muffin tin from the oven and let cool.

10. Once the egg bites are cooled, store them in air-tight containers, 2 broccoli egg bites per container, and place them in the fridge.

11. When you're ready to enjoy the egg bites, microwave them for 1 to 2 minutes, then serve, and enjoy!

Tip

Serve with Frank's Hot Sauce for some extra heat, which would not affect your allotments! You can also enjoy the egg bites with 1 tablespoon of ketchup, per 2 bites, which would add 1 Extra allotment.
