BBQ Chicken Skewers Recipe
One serving = 1 Protein, 1 Vegetable, 1 Extra
20 oz (600 g) raw boneless-skinless chicken breast
1⁄4 cup (50 ml) BBQ sauce (lower calorie/lower sodium)
1-2 Tbsp (15-30 ml) hot sauce
2 Tbsp (30 ml) water
2 green peppers
1 medium white onion
4 packets brown sugar artificial sweetener
Cut chicken into cubes. In a small bowl, combine hot sauce, water, sugar substitute and half the BBQ sauce. Toss chicken in marinade to coat.
Cut green peppers and onion into 1 inch squares. Alternate chicken, pepper and onion squares on skewers. Grill on a barbecue set at medium-high heat OR place in 400°F (200˚C) preheated oven.
While cooking, brush remaining BBQ sauce over skewers.
Cook approximately 10-15 minutes or until chicken is no longer pink.
