Baked Cheesecake Recipe

Serves 8.

One serving = 1 Free Exchange  or  ¾ Protein, ½ Fruit


2 large eggs (whole)
4 large egg whites
1 pkg artificial sweetener
1 tsp vanilla extract
3 cups cottage cheese (1% or non-fat)
1 tsp cinnamon
2 cups blueberries


Blend eggs, egg whites, sweetener and vanilla extract in a blender. Gradually add cottage cheese until very smooth. Pour into a non-stick pan and top with cinnamon.

Bake at 350° F for 45 minutes or until firm. Turn off oven but leave cheesecake in the oven for one hour with the door open.

Chill overnight.

Top with crushed blueberries before serving.
