Asian Chicken Salad

The Asian Chicken Salad recipe makes a wonderful side dish for dinner or lunch. Easy to make and healthier than many alternatives, this salad is sure to please — enjoy!


2 Tbsp rice vinegar
1 Tbsp low-sodium soy sauce
2 tsp sesame oil
1 tsp fresh ginger
1 tsp honey

4 cups mesclun mix
10 oz. cooked chicken breast, chopped into cubes
1 cup carrots, julienned
1 cup snow peas
1 oz. slivered almonds


1. In a bowl, combine vinegar, soy sauce, sesame oil, ginger, and honey. Stir well.

2. In a separate bowl, mix salad greens, chicken, carrots, and snow peas.

3. Drizzle dressing on top and toss until well-coated.

4. Sprinkle with almonds and serve.
