Asian Chicken Salad Recipe

Serves 4 | One serving = 1⁄2 Protein, 2 Vegetable, 1 Fat

Ingredients 

  • 2 Tbsp rice vinegar
  • 1 Tbsp low-sodium soy sauce
  • 2 tsp sesame oil 
  • 1 tsp fresh ginger
  • 1 tsp honey 
  • 4 cups mesclun mix
  • 10 oz. cooked chicken breast, chopped into cubes
  • 1 cup carrots, julienned
  • 1 cup snow peas 
  • 1 oz. slivered almonds 

Ingredients 

  • 2 Tbsp rice vinegar
  • 1 Tbsp low-sodium soy sauce
  • 2 tsp sesame oil 
  • 1 tsp fresh ginger
  • 1 tsp honey 
  • 4 cups mesclun mix
  • 10 oz. cooked chicken breast, chopped into cubes
  • 1 cup carrots, julienned
  • 1 cup snow peas 
  • 1 oz. slivered almonds 

Instructions

In a bowl, combine vinegar, soy sauce, sesame oil, ginger, and honey. Stir well.

In a separate bowl, mix salad greens, chicken, carrots, and snow peas. Drizzle dressing on top and toss until well coated.

Sprinkle with almonds and serve.
