Mother's Day Veggie Omelet!

1 Serving = 1 protein, 1 vegetable, 1 dairy
What You Need
2 Tbsp skim milk
½ cup cooked broccoli, chopped
1 small tomato, cut into 6 slices
1oz reduced-fat swiss cheese, shredded
¼ tsp dried basil
1 tsp dried onion
½ tsp garlic powder
How You Prepare ItPreheat oven to 325ºF. Beat eggs until light and fluffy. Stir in broccoli, seasonings, half of the cheese, and the milk. Pour mixture into ungreased baking dish. Arrange tomato slices on top. Bake, uncovered, for 20-25 minutes. Sprinkle with remaining cheese and bake for 3-5 minutes more.
